Pancake Preparation

    Make the Pancake Batter

    In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together until well blended.

    Add Wet Ingredients

    In a separate bowl, whisk together the milk, egg, and melted butter. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

    Fold in Blueberries

    Gently fold in the blueberries to the batter, ensuring they are evenly distributed.

Bacon Cooking

    Cook the Bacon

    In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Remove from skillet and let drain on paper towels.

Pancake Cooking

    Heat the Pan

    In the same skillet (or a non-stick frying pan), reduce the heat to medium-low and lightly grease with a little butter.

    Cook the Pancakes

    Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.

Syrup Preparation

    In a saucepan over medium heat, combine 1 cup of water, 1 cup of sugar, and 1 cup of chopped pecans. Bring to a simmer and cook for 10 minutes, stirring occasionally. Remove from heat and let cool.

    In another saucepan, combine 1 cup of blueberries, 1 cup of sugar, and 1 cup of water. Bring to a boil, then reduce heat and simmer for 10 minutes until blueberries burst and the syrup thickens. Strain if desired.
