Method
Prepare the Dough
Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let sit for about 5 minutes until frothy.
Mix Dough
In a large bowl, whisk together flour and salt. Make a well in the center, add activated yeast and olive oil. Mix until it comes together.
Knead Dough
Turn the dough onto a floured surface. Knead for about 8-10 minutes until smooth and elastic.
Rise
Place dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assemble and Bake
Preheat Oven
Preheat your oven to 475°F (245°C).
Shape Dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
Add Pesto
Spread pesto evenly over the pizza base.
Add Toppings
Layer vegan mozzarella, artichokes, roasted red peppers, and marinated cherry tomatoes on top of the pesto.
Bake
Transfer the pizza to a baking sheet or pizza stone and bake for 12-15 minutes until the crust is golden and the cheese is melted.
Garnish
Remove from the oven and garnish with fresh basil leaves before slicing and serving.
