Chorizo Preparation

    Make the Chorizo

    In a bowl, mix together ground pork, paprika, cumin, garlic powder, oregano, salt, black pepper, and red pepper flakes. Form into patties and set aside.

Hash Preparation

    Cook the Hash

    In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown and crispy, about 10-15 minutes. Add onion, mushrooms, jalapeño, and cook until softened. Stir in baby kale and scallions, and cook for another 2-3 minutes.

Eggs Preparation

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the simmering water. Cook for 3-4 minutes or until whites are set but yolks are still runny. Remove with a slotted spoon.

Hollandaise Sauce Preparation

    Make the Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk until thickened. Slowly drizzle in melted butter while whisking continuously. Season with salt.

Assembly

    Assemble the Dish

    On a plate, layer the crispy hash, top with chorizo patties, poached eggs, and drizzle with hollandaise sauce. Serve immediately.
