Prepare the Caramelized Onions

Slice the onion thinly and heat a pan over medium heat. Add a small amount of oil and the onions, cooking slowly until they are golden brown, about 15-20 minutes. Stir occasionally to prevent burning.

Confit the Tomato

Preheat the oven to 275°F (135°C). Slice the tomato in half and place it cut-side up on a baking sheet. Drizzle with olive oil, salt, and pepper. Bake for 1 hour until soft and concentrated in flavor.

Grill the Steak

Season the flat iron steak with salt and pepper. Preheat a grill or grill pan over medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.

Toast the Sourdough

While the steak is resting, toast the sourdough bread slices on the grill or in a toaster until golden and crispy.

Assemble the Sandwich

Spread romesco sauce on one side of each slice of toasted sourdough. Layer arugula, sliced steak, caramelized onions, and confit tomatoes on one slice. Drizzle chimichurri sauce over the top and close with the other slice of bread.

Cut the sandwich in half and serve immediately, enjoying the blend of flavors and textures.
