    Caramelize the Onions

    In a large pot, melt the unsalted butter over medium heat. Add the sliced yellow onions and cook, stirring occasionally, for about 30-40 minutes until they are deeply caramelized and golden brown.

    Deglaze the Pot

    Once the onions are caramelized, add the dry white wine to deglaze the pot. Scrape up any browned bits from the bottom and let it simmer for about 5 minutes until the wine has reduced slightly.

    Add Broth and Seasonings

    Pour in the beef broth, add thyme, bay leaf, salt, and black pepper. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 20-30 minutes to allow the flavors to meld.

    Prepare the Croutons

    While the soup is simmering, preheat the oven to 375°F (190°C). Place the French bread slices on a baking sheet, drizzle with olive oil, and bake for about 10-15 minutes until golden and crispy.

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of the toasted bread and sprinkle with grated Swiss cheese.

    Place the bowls under the broiler for 3-5 minutes until the cheese is melted and bubbly. Keep a close eye to prevent burning.
