Prepare the Batter
In a large mixing bowl, whisk together the buckwheat flour, all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Griddle
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook the Pancakes
Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.

Serve warm with your choice of toppings such as maple syrup, fresh berries, or whipped cream.
