    Prepare the mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.

    Sauté the aromatics

    In a large pot over medium heat, add a splash of olive oil. Once hot, add the minced garlic, sliced leeks, and minced shallots. Sauté until soft and fragrant, about 5 minutes.

    Add spice and liquid

    Stir in the crushed coriander seed and chopped preserved lemon. Pour in the Allagash White beer and bring to a simmer.

    Cook the mussels

    Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Finish the broth

    Once the mussels are cooked, stir in the heavy cream and chopped herbs (cilantro, dill, and parsley). Adjust seasoning with salt and pepper to taste.

    Ladle the mussels and broth into bowls and serve with grilled bread on the side for dipping.
