Take each piece of Tomino cheese and wrap it tightly with two slices of speck. Ensure the cheese is fully covered by the speck.

Prepare the Reduction

In a small saucepan, combine the balsamic vinegar, honey, and salt. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and let it simmer for about 15-20 minutes, or until it thickens slightly. Stir occasionally to prevent burning.

Season the Reduction

Once the balsamic reduction has thickened, remove it from the heat and season with black pepper to taste. Set aside to cool.

Baking the Cheese

Bake the Wrapped Cheese

Preheat your oven to 200°C (400°F). Place the wrapped Tomino cheese on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, or until the cheese is soft and slightly bubbly.
