Pinsa Dough
1. Prepare the Dough
In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
2. Add the olive oil and salt to the yeast mixture. Gradually add the flour, mixing until a dough forms.
3. Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 1 hour, or until doubled in size.

4. Make the Frittata
In a bowl, whisk together the eggs, milk, salt, black pepper, and chopped parsley until well combined.
5. Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook for 5-7 minutes, or until the edges are set, then flip or cook under a broiler until the top is set.
Panino Assembly
6. Prepare the Bacon
Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
7. Preheat the oven to 450°F (230°C). Roll out the risen dough on a floured surface to about 1/2 inch thick. Cut into rectangles.
8. Place a slice of frittata, a slice of stracchino cheese, and crispy bacon on one half of the dough, then fold it over to make a sandwich.
9. Transfer the panino to a baking sheet and bake for 10-12 minutes, or until golden brown.
Side Preparation

For Patatine, cut the potatoes into thin fries, season with salt, and fry or bake until crispy.
11. For Mista, simply toss the mixed salad greens with your choice of vinaigrette.
12. For Cesare, chop the romaine lettuce and toss with Caesar dressing and Parmesan cheese.
