Salad Preparation

Prepare the Arugula
In a large bowl, add 4 cups of fresh arugula. Rinse the arugula under cold water to remove any dirt or grit. Shake off excess water or use a salad spinner to dry it.

Add Cherry Tomatoes
Rinse 1 cup of cherry tomatoes under cold water. Cut each cherry tomato in half and add them to the bowl with the arugula.

Shave the Parmigiano-Reggiano
Using a vegetable peeler, shave 0.5 cup of Parmigiano-Reggiano cheese into thin slices or shavings. Add the cheese to the salad bowl.
Dressing Preparation

Mix the Dressing Ingredients
In a small bowl or jar, combine 3 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 1 tablespoon of fresh orange juice, and 1 teaspoon of honey. Season with 0.5 teaspoon of salt and black pepper to taste.

Whisk or Shake
Whisk the dressing ingredients together until emulsified or seal the jar and shake vigorously until well combined.
Assembly

Combine Salad and Dressing
Drizzle the citrus dressing over the arugula, cherry tomatoes, and shaved Parmigiano-Reggiano. Gently toss the salad using tongs or your hands until everything is well coated.

Serve
Transfer the salad to serving plates or a large serving bowl. Serve immediately and enjoy your fresh Rucola salad!
