Preparation of Sweet Potatoes

Boil Sweet Potatoes
Peel and chop sweet potatoes into uniform chunks (about 1-inch). Place them in a pot of salted water, ensuring they are fully submerged. Bring to a boil over medium-high heat.

Cook Until Tender
Once boiling, reduce heat to medium and let cook for about 15-20 minutes or until sweet potatoes are fork-tender. You should be able to easily pierce them with a fork.

Drain and Set Aside
Once cooked, drain the sweet potatoes in a colander and let them sit to steam off excess water for a couple of minutes.
Making the Purea

Mash the Sweet Potatoes
In a large mixing bowl, add the drained sweet potatoes. Use a potato masher or fork to mash them until smooth and creamy.

Add Ingredients
To the mashed sweet potatoes, add the butter, finely chopped fresh rosemary, grated Parmigiano-Reggiano cheese, salt, and black pepper. Stir well to combine all ingredients.

Taste and Adjust
Taste the puree and adjust seasoning if necessary. You may add more salt, pepper, or rosemary to your liking.
