Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (about 110°F/43°C) and active dry yeast. Let it sit for 5-10 minutes until it becomes frothy.

    In a large mixing bowl, combine the bread flour, rice flour, and salt. Mix well to ensure even distribution.

    Make a well in the center of the dry ingredients and add the frothy yeast mixture along with the olive oil. Mix until a shaggy dough forms.

    Kneading

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for 1-2 hours or until doubled in size.

Assembly and Baking

    Preheat your oven to 475°F (245°C) for at least 30 minutes before baking.

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal pieces. Shape each piece into a rectangular or oval shape, about 1/2 inch thick.
