    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut each potato into thin strips, approximately 1/4 inch wide. Rinse the cut potatoes in cold water to remove excess starch.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to make them crispier when fried.

Frying

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

    Dry the Potatoes

    Once the potatoes have soaked, drain and pat them dry using paper towels to remove as much moisture as possible.

    Fry the Potatoes

    Carefully add a handful of dried potato strips into the hot oil. Fry for about 5-6 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and black pepper to taste.

Finishing Touch

    Add Truffle Oil

    Drizzle the truffle oil over the hot fries and toss gently to coat them evenly. Serve immediately while hot and crispy.
