Prepare Tomato Vellutata

Cook Tomatoes
Add the chopped ripe tomatoes to the pot, stirring to combine. Cook for about 10 minutes until the tomatoes start breaking down.

Add Broth and Seasoning
Pour in the vegetable broth, add sugar, salt, and black pepper to taste. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Blend the Sauce
Using an immersion blender, blend the mixture until smooth. Adjust seasoning as necessary, then set aside.
Cook Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook Paccheri
Add the paccheri pasta to the boiling water and cook according to package instructions, usually about 12-14 minutes until al dente.

Drain Pasta
Once cooked, drain the pasta and reserve a little pasta water. Set aside.
Assemble the Dish

Combine Pasta and Sauce
In a large bowl, combine the drained paccheri pasta with the tomato vellutata. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.

Plate the Dish
Serve the pasta on plates, adding pieces of burrata on top of each portion.

Finish with fresh basil leaves and a drizzle of extra virgin olive oil over the top.
