Braised Beef Short Rib

    Prepare the beef

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the beef

    In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side until browned. Remove from the pot and set aside.

    Sauté the vegetables

    In the same pot, add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are soft. Add the minced garlic and sauté for an additional minute.

    Deglaze the pot

    Pour in the red wine and scrape the bottom of the pot to deglaze it. Let it simmer for about 3-4 minutes until the wine reduces slightly.

    Add the broth and herbs

    Return the short ribs to the pot, add the beef broth, thyme, and bay leaves. Bring to a gentle simmer.

    Braise the beef

    Cover the pot and reduce the heat to low. Let it braise for about 2.5 to 3 hours, or until the meat is tender and pulls apart easily.

    Shred the beef

    Once the beef is tender, remove it from the pot and shred it using two forks. Discard any excess fat.

    Cook the rigatoni

    In a large pot of salted boiling water, cook the rigatoni according to the package instructions until al dente. Drain and set aside.

Assembly

    Combine the pasta and beef

    In a large bowl, combine the cooked rigatoni with the shredded beef short rib and a few ladles of the braising liquid. Toss until well mixed.

    Serve

    Plate the rigatoni and beef mixture, and top with shaved Parmigiano-Reggiano cheese. Serve hot.
