    Clean the mushrooms

    Using a damp cloth, gently wipe the mixed mushrooms to remove any dirt. Avoid washing them under running water to prevent them from becoming soggy.

    Chop the mushrooms

    Slice the cleaned mushrooms into even pieces, about 1/4 inch thick, to ensure they cook evenly.

    Mince the garlic

    Peel and finely mince the garlic cloves, set aside for later use.

    Chop the parsley

    If using, finely chop the fresh parsley and set aside for garnish.

Cooking

    Heat the oil

    In a large skillet, heat the extra virgin olive oil over medium heat until shimmering but not smoking.

    Sauté the garlic

    Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant, being careful not to let it burn.

    Add the mushrooms

    Add the sliced mixed mushrooms to the skillet. Stir well to coat them in the garlic and oil.

    Cook the mushrooms

    Cook the mushrooms for about 5-7 minutes, stirring occasionally, until they are tender and have released their moisture. They should be golden brown by the end.

    Season the mushrooms

    Once the mushrooms are cooked, season with salt and black pepper to taste. Stir well to combine.

    Garnish and serve

    If using, sprinkle the chopped fresh parsley over the sautéed mushrooms before serving. Serve warm as a side dish or topping.
