Method

Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove the beards (the fibrous threads) by pulling them towards the hinge of the mussel. Discard any open or damaged mussels.

Making the Spicy Cherry Tomato Sauce

    Sauté the Garlic

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it burn.

    Add Red Pepper Flakes

    Stir in the red pepper flakes and cook for an additional 30 seconds to release their flavor.

    Add Cherry Tomatoes

    Add the cherry tomatoes to the pot. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes begin to burst and create a sauce.

    Season the Sauce

    Add salt and black pepper to taste. Stir in the fresh basil leaves, allowing them to wilt slightly in the sauce.

Cooking the Mussels

    Combine Mussels and Sauce

    Add the cleaned mussels to the pot with the spicy cherry tomato sauce. Stir to coat the mussels in the sauce.

    Cover and Cook

    Cover the pot and cook for about 5-7 minutes until the mussels open up. Discard any mussels that do not open.

Serving

    Plate the Dish

    Serve the mussels hot, spooning the spicy cherry tomato sauce over them. Garnish with additional fresh basil if desired.
