Shrimp Preparation

    Prepare the Shrimp

    In a medium bowl, combine the all-purpose flour, cornmeal, and Cajun seasoning. Mix well. In another bowl, whisk together the eggs and buttermilk until smooth.

    Coat the Shrimp

    Dip each shrimp first into the buttermilk mixture, allowing excess to drip off, then coat thoroughly in the flour mixture. Repeat until all shrimp are coated.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully place the coated shrimp into the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Sandwich Assembly

    Prepare the Buns

    Slice the French baguette or hoagie rolls in half lengthwise. Optionally, toast them lightly on a skillet or under a broiler for added crispiness.

    Assemble the Po'boy

    Spread a generous amount of remoulade sauce on the inside of each bun. Layer with shredded lettuce, sliced tomatoes, pickles, and then top with the fried shrimp.

    Serve

    Close the sandwich and serve immediately with extra remoulade and lemon wedges on the side.
