    Season the Steak

    Pat the ribeye steaks dry with paper towels. Generously season both sides of each steak with kosher salt and black pepper. Let the steaks sit at room temperature for about 30 minutes to enhance the flavor.

    In a large cast-iron skillet or heavy-bottomed pan, heat olive oil over medium-high heat until it shimmers but does not smoke.

    Sear the Steak

    Place the seasoned ribeye steaks in the hot skillet. Sear for about 4-5 minutes on one side until a golden-brown crust forms.

    Add Aromatics

    Flip the steaks and add crushed garlic cloves and fresh rosemary to the pan. Continue to cook for another 3-4 minutes for medium-rare, basting the steaks with the pan juices using a spoon.

    Check for Doneness

    Use an instant-read thermometer to check the internal temperature. For medium-rare, it should register about 130°F (54°C). Adjust cooking time according to your desired doneness.

    Remove the steaks from the skillet and transfer them to a cutting board. Cover loosely with foil and let rest for 5-10 minutes before slicing.
