Preparation

    Marinate the Salmon

    In a bowl, combine olive oil, salt, black pepper, and lemon juice. Place the salmon fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the salmon is marinating, prepare the seasonal vegetables. Trim the asparagus, slice the bell pepper, and cut the zucchini into rounds. Set aside.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (around 375-400°F or 190-200°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill skin-side down. Grill for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    In a bowl, toss the prepared vegetables with olive oil and salt. Place them on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

    Once cooked, remove the salmon and vegetables from the grill. Serve the salmon fillets alongside the grilled seasonal vegetables on a plate. Optionally, drizzle with more lemon juice before serving.
