    In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and let simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

    While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add diced red bell pepper and zucchini, cooking for another 5 minutes until softened.
