Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and melt it gently over a double boiler or in the microwave in short bursts until smooth. Allow to cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

    Beat Egg Whites

    In a clean bowl, beat the egg whites until foamy, then gradually add the sugar and continue to beat until stiff peaks form.

    Combine Mixtures

    Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites until no white streaks remain.

    Chill and Serve

    Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours before serving.

Lemon Tart

    Pre-bake Pastry

    Preheat the oven to 180°C (350°F). Place the shortcrust pastry in a tart pan and prick the base with a fork. Bake for 15 minutes until golden, then remove and let cool.

    Prepare Filling

    Zest and juice the lemons. In a bowl, whisk together the lemon juice, zest, sugar, eggs, and melted butter until smooth.

    Bake Tart

    Pour the lemon filling into the pre-baked tart shell and bake for an additional 25-30 minutes until set. Allow to cool before slicing.

Berry Parfait

    Layer Ingredients

    In a glass or bowl, start by adding a layer of yogurt, followed by a layer of mixed berries, then a drizzle of honey and a layer of granola. Repeat the layers until the glass is full.

    Enjoy immediately or refrigerate for up to an hour before serving.
