Crab Filling Preparation

    Combine Ingredients

    In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, lemon juice, chopped green onions, Old Bay seasoning, and season with salt and black pepper to taste. Gently fold the ingredients together until well combined, being careful not to break the crab meat too much.

    Chill Mixture

    Cover the bowl with plastic wrap and refrigerate the crab mixture for at least 30 minutes. This allows the flavors to meld together.

Po'boy Assembly

    Prepare the Bread

    While the crab filling is chilling, slice the French bread or hoagie rolls in half lengthwise. If desired, lightly toast the inside of the bread under a broiler until golden brown.

    Assemble the Po'boys

    Spread a generous amount of the crab mixture onto the bottom half of each roll. Top with a leaf of lettuce, a couple slices of tomatoes, pickles, and drizzle with hot sauce if desired.

    Serve

    Close the sandwich with the top half of the roll and serve immediately while fresh.
