Melt Chocolate and Butter
Preheat your oven to 200°C (400°F). In a heatproof bowl, add the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Alternatively, you can melt them in the microwave in short bursts, stirring in between.

Mix the Batter
In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until the mixture is thick and pale. Stir in the melted chocolate and butter mixture along with the vanilla extract. Mix until fully combined.

Add Flour and Salt
Sift the all-purpose flour and salt into the chocolate mixture. Fold gently with a spatula until just combined; be careful not to overmix.

Bake the Cakes
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is soft and slightly jiggly.

Rest and Serve
Remove the cakes from the oven and let them sit for 1 minute. Carefully invert each ramekin onto a plate and tap gently to release the cake. Serve immediately with a scoop of vanilla ice cream on top.
