Preparing the Fries

    Wash and peel the russet potatoes. Cut them into long strips, about 1/4 inch thick.

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drain the soaking water and pat the potatoes dry with paper towels to remove moisture.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
