Preparing the Burger Patties

    Cook the Black Beans

    In a medium saucepan, cook the black beans over medium heat until heated through, about 5 minutes. Drain and mash them in a large bowl.

    Combine Ingredients

    Add oats, corn, diced bell pepper, grated carrot, chopped onion, minced garlic, cumin, salt, and black pepper to the mashed black beans. Mix well until combined.

    Prepare Flaxseed Mixture

    In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes until it thickens.

    Combine Flaxseed with Mixture

    Add the thickened flaxseed mixture and olive oil to the veggie mixture. Stir until everything is evenly combined.

    Shape Patties

    Form the mixture into two patties, about 1 inch thick.

Cooking the Patties

    Heat the Pan

    Heat a non-stick skillet over medium heat and add a little olive oil.

    Cook the Patties

    Once the skillet is hot, place the patties in the skillet. Cook for about 5-7 minutes on each side or until golden brown.

Assembling the Burger

    Prepare the Buns

    Lightly toast the whole grain burger buns on another skillet or toaster.

    Layer the Ingredients

    On the bottom half of each bun, place a lettuce leaf, followed by a cooked veggie patty, a slice of tomato, and slices of avocado.

    Finish Assembling

    Top with the other half of the bun and serve immediately.
