Preparing the Squid

    Clean and Cut the Squid

    Ensure the squid is cleaned properly. Cut the squid bodies into rings about 1 cm thick.

    Prepare the Coating

    In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper until well combined.

    Coat the Squid

    Dredge the squid rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Frying the Squid

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Squid

    Carefully add the coated squid rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes until golden and crispy.

    Drain the Squid

    Using a slotted spoon, remove the fried squid from the oil and place them on paper towels to drain excess oil.

Preparing the Aioli

    Mix the Aioli

    In a bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir well until smooth.

    Add salt and black pepper to taste, mixing well to incorporate. Adjust seasoning as necessary.

    Arrange the crispy squid on a serving platter and serve with the aioli on the side for dipping.
