For the Battered Fish

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and has no lumps. Let the batter rest for 30 minutes.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there’s enough oil to completely submerge the fish.

    Coat and Fry the Fish

    Dip each cod fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

For the Chips

    Prepare the Potatoes

    Peel and cut the potatoes into thick chips. Rinse them under cold water to remove excess starch and pat them dry with a kitchen towel.

    In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Carefully add the potato chips to the hot oil in batches, frying for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

For the Tartar Sauce

    Mix the Ingredients

    In a small bowl, combine the mayonnaise, chopped pickles, chopped capers, lemon juice, and Dijon mustard. Season with salt and black pepper to taste. Mix well until all ingredients are fully incorporated.
