Cake Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt in the microwave in 30-second intervals, stirring until smooth.

    Whisk Eggs and Sugar

    In a separate bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is pale and thick.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt. Gently fold in the all-purpose flour until just combined.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake

    Bake in the preheated oven for about 12-14 minutes, until the edges are firm but the center is soft and jiggly.

    Remove the ramekins from the oven and let them cool for 1-2 minutes. Run a knife around the edges to loosen the cakes.

    Invert and Serve

    Carefully invert each ramekin onto a plate, allowing the cake to release. Dust with powdered sugar and serve immediately with vanilla ice cream and fresh berries, if desired.
