Method

Crust

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.

  2. 2

    Form the crust

Mix until the crumbs are well coated with butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  3. 3

    Bake the crust

Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and allow it to cool while preparing the filling.

Filling

  1. 4

    Prepare the filling

In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

  2. 5

    Add sugar and sour cream

Gradually add in the granulated sugar and continue mixing until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

  3. 6

    Incorporate eggs

Add the eggs one at a time, mixing on low speed after each addition just until combined. Be careful not to overmix.

  4. 7

    Add flour

Finally, sift in the all-purpose flour and gently fold it into the mixture until no flour is visible.

  5. 8

    Bake the cheesecake

Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven at 325°F (163°C) for 55 to 70 minutes, or until the center is set but still slightly jiggly.

  6. 9

    Cool and chill

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
