Ingredients for Wild Boar Gnocchi

Method

Directions for Preparing Wild Boar Gnocchi

  1. 1

    Prepare the Wild Boar Belly

Braised the wild boar belly slowly for several hours in a mixture of water, salt, and seasoning until tender. Allow it to cool, then cut into bite-sized pieces.

  2. 2

    Make the Ricotta Gnocchi

Boil the potatoes until soft, let them cool, and then mash. Mix the mashed potatoes with ricotta, egg, flour, salt, and pepper. Form into small dumplings.

  3. 3

    Cook the Gnocchi

Bring a pot of salted water to a boil. Drop the gnocchi into the water and cook until they float to the surface. Remove with a slotted spoon and set aside.

  4. 4

    Prepare the Wild Foraged Mushrooms

Sauté the wild foraged mushrooms in a pan with a little oil until golden brown. Add cognac and let it reduce slightly.

  5. 5

    Make the Ham Hock Demi

In a saucepan, simmer the ham hock with demi-glace until the flavors meld and the sauce thickens slightly.

  6. 6

    Plate the Dish

On a plate, place the gnocchi, top with braised boar belly, sautéed mushrooms, goat mascarpone, and demi-glace. Garnish with dressed frisee, shaved pecorino, and crispy skin.
