Method

Prepare Quail

    Stuff the Quail

    Preheat your grill to medium heat. In a skillet, cook the chorizo until browned. Let it cool, then mix with chopped hazelnuts. Stuff the mixture into the quail and secure with toothpicks.

    Season and Grill

    Rub the stuffed quail with olive oil, salt, and black pepper. Grill for about 15-20 minutes, turning occasionally until cooked through.

Braised Collard Greens

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until soft.

    Cook Collard Greens

    Add the collard greens, vegetable broth, apple cider vinegar, and red pepper flakes. Cover and simmer for 30-40 minutes until greens are tender.

Prepare Farro Risotto

    Cook Farro

    In a pan, sauté onion in butter until translucent. Add farro and stir for a minute. Gradually add vegetable broth, one ladle at a time, stirring constantly until farro is tender, about 25-30 minutes.

    Finish Risotto

    Stir in grated parmesan cheese, salt, and black pepper. Remove from heat.

Make Apple Jack Hot Honey

    Combine Ingredients

    In a small saucepan, combine honey, apple jack, and cayenne pepper. Warm over low heat until combined. Set aside.
