Prepare the Oysters
Preheat your oven to 400°F (200°C). Shuck the oysters and place them on a baking sheet.

Make the Creamed Spinach and Nettles
In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Add spinach and wild nettles, cooking until wilted. Stir in Pernod and cook for another 2 minutes. Remove from heat and mix in half of the Parmesan cheese, salt, and pepper.

Assemble the Oysters
Spoon the creamed spinach and nettles mixture generously over each oyster. Sprinkle the remaining Parmesan cheese and breadcrumbs on top of each.

Bake the Oysters
Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the oysters are cooked through and the topping is golden brown.

Serve
Remove from the oven and let cool slightly before serving. Enjoy your Oysters Rockefeller!
