Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Stir in the white stone grits and cook according to the package instructions, usually about 20 minutes, stirring occasionally until creamy. Once cooked, stir in Sauternes wine, and season with salt and pepper to taste. Keep warm.

Cook the Prawns
In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the prawns and cook until they turn pink and opaque, about 3-4 minutes.

Add Flavor
Stir in the smoked ancho pepper, Worcestershire sauce, and the remaining butter. Cook for an additional 2 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
