    Preheat the grill to medium-high heat. Slice the endive heads in half lengthwise and brush the cut sides with olive oil. Season with salt and pepper.

    Place the endive cut-side down on the grill. Grill for about 5-7 minutes until charred and slightly wilted. Remove from grill and set aside.

    Fry the Capers

    In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the capers and fry until they are crispy, about 2-3 minutes. Remove and drain on paper towels.

    Beer Battered Smelts

    In a bowl, mix the flour, beer, salt, and pepper to create a batter. Dip the smelts into the batter and then fry them in hot oil until golden and crispy, about 4-6 minutes. Drain on paper towels.

    On a plate, place the grilled endive wedges. Top them with fried capers, beer-battered smelts, and sprinkle with grated Parmigiano Reggiano and bread crumbs.
