Prepare potatoes

Boil the peeled potatoes in salted water until tender (20–25 minutes). Drain well and mash while still hot to a smooth, lump-free texture. Spread on a plate to cool slightly for 5–8 minutes.

Make tempering and mix

Heat 2 tbs oil in a small pan over medium heat. Add mustard seeds; when they begin to pop, add cumin seeds, asafoetida and curry leaves. Sauté for 10–15 seconds, then add chopped onion and a pinch of salt. Cook until translucent, about 3–4 minutes. Add green chilies, ginger and garlic; sauté 30–45 seconds until fragrant. Stir in turmeric, then remove from heat.

Combine filling

Add the tempering-onion mixture to the warm mashed potatoes. Add chopped cilantro, salt (1.5 tsp), black pepper and lemon juice. Mix thoroughly and taste; adjust seasoning. Divide mixture into 8 equal portions and shape each into a smooth, slightly flattened ball (about 80–90 g each). Keep covered to prevent drying.

Make chickpea batter

In a bowl, whisk 1 cup besan with 2 tbs rice flour, 0.25 tsp baking soda (if using) and 0.25 tsp salt. Gradually add ~3/4 cup water to make a smooth, thick batter that coats the back of a spoon. The batter should be lump-free and pourable but thick enough to cling to the vadas.

Fry vadas

Heat 3–4 cups (about 400–500 ml) vegetable oil in a heavy-bottomed pan to 170–180°C (340–355°F) or medium-high. Test by dropping a small amount of batter — it should sizzle and rise slowly. Dip each potato ball into the batter to coat completely, letting excess drip back into the bowl, then carefully slide into the hot oil. Fry in batches without crowding, turning occasionally, until golden brown and crisp, 4–6 minutes per batch. Remove with a slotted spoon to a wire rack or paper towels to drain. Keep warm in a low oven if needed.

Cilantro green chutney (quick)

Combine cilantro, mint (if using), green chili, lemon juice, salt and 2 tbs water in a blender. Blitz until a smooth, bright green chutney forms, stopping to scrape down sides. Adjust salt and lemon to taste. Transfer to a small bowl; refrigerate until assembly.

Tamarind-date sweet chutney (quick)

In a small saucepan, combine tamarind paste, jaggery (or brown sugar) and 3 tbs water. Bring to a gentle simmer over medium heat, stirring until sweetener dissolves and mixture thickens slightly (3–5 minutes). Remove from heat; stir in roasted cumin powder and a pinch of salt. Cool to room temperature — should be pourable but syrupy.

Pav (bread) & assembly

Slice pav buns horizontally but keep halves attached (like a hinge) or fully split if preferred. Lightly butter the inner sides of each pav. For garlic pav, mix grated garlic into softened butter before spreading. Toast lightly on a flat pan or skillet over medium heat until golden and warm, 1–2 minutes per side.

To assemble each vada pav: Spread about 1–2 tbs green chutney on the inside of one pav half and 1 tbs tamarind-date chutney on the other half (adjust to taste). Place a hot potato vada into the pav. Optionally sprinkle 1–2 tsp dry garlic/chili chutney (podi) for extra heat/crunch. Press the bun closed and serve immediately while vada is hot and pav is crisped.

Serve: Plate vada pavs with extra green chutney and sweet chutney on the side. Best enjoyed hot; makes 8 servings.
