Rice & Prep
Rinse and soak rice
Rinse basmati rice under cold water until the water runs mostly clear. Soak the rice in 2 cups cold water for 20–30 minutes, then drain and set aside.
Saffron infusion
If using saffron, steep threads in 2 tablespoons warm water and set aside.
Marinade & Protein Prep
Marinate chicken (or mushrooms)
In a bowl combine yogurt, 1/2 tsp salt (from total), 1/4 tsp black pepper, 1/4 tsp turmeric, 1/2 tsp ground coriander and 1/4 tsp red chili powder. Add chicken pieces and coat thoroughly. If making vegetarian, toss wild mushrooms with the yogurt-spice mix and let sit 15–20 minutes.
Vegetables & Aromatics
Heat 2 tablespoons ghee or oil in a heavy-bottomed pot or Dutch oven over medium heat. Add whole cumin seeds and let them sizzle until fragrant (about 30 seconds). Add crushed cardamom, cloves, cinnamon stick and bay leaves and toast for 30–45 seconds more.
Stir in minced garlic and bruised chopped lemongrass. Cook 1 minute until aromatic. Add chopped tomato and cook until softened and oil starts to separate, about 3–4 minutes.
Protein Cooking
Push aromatics to the side and add remaining 1 tablespoon oil/ghee. Add marinated chicken pieces in a single layer. Sear 2–3 minutes per side until light golden (they will finish cooking with the rice). Stir to combine with onions and spices, then sprinkle 1/2 tsp turmeric, remaining ground coriander, remaining red chili powder and 1/4 tsp garam masala over the mixture. Cook 2 more minutes to bloom spices.
Assembling Biryani
Pour in 2 1/4 cups chicken or vegetable broth and bring to a gentle simmer. Taste and adjust salt (add remaining salt if needed). Add drained basmati rice in an even layer over the simmering broth and protein/vegetable mixture—do not stir.
Scatter the asparagus pieces on top, along with the reserved fried onions, chopped cilantro and mint (reserve a little for garnish). Drizzle saffron infusion (if using) and lemon juice evenly over the rice. Sprinkle remaining 1/4 tsp garam masala and a light pinch of black pepper across the top.
Bring the pot back to a gentle simmer, then cover tightly with a lid (seal edges with a damp kitchen towel or use foil under the lid for a better seal). Reduce heat to low and steam (dum) for 18–22 minutes, until rice is tender and liquid is absorbed and chicken is cooked through (internal temp 165°F / 74°C) or mushrooms are tender.
Finishing & Garnish
Turn off heat and let the biryani rest, covered, for 8–10 minutes. This settles the steam and firms the rice.
Gently fluff the rice with a fork from the edges to the center to lift and mix layers slightly, taking care not to mash the grains. Transfer to a serving dish or serve straight from the pot.
