Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half. Toss them in a bowl with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for about 20-25 minutes or until they are crispy and golden brown.

Assemble the Grilled Cheese
While the Brussels sprouts are roasting, butter one side of each slice of bread. On the unbuttered side, layer a generous amount of cheddar cheese. Once the Brussels sprouts are done, add them on top of the cheese, then top with another slice of bread, buttered side out.

Serve
Remove the sandwich from the skillet, let it cool for a minute, then cut in half and serve hot. Enjoy your Brussels sprouts grilled cheese!
