Ahi Tuna

Honey Spiced Eggplant

Preparation

Prepare Ahi Tuna

1. Marinate Ahi Tuna

In a bowl, mix soy sauce, salt, and black pepper. Marinate the Ahi tuna steaks for about 15 minutes.

2. Crust the Tuna

Remove the tuna from the marinade and coat each side with sesame seeds, pressing gently to adhere.

3. Sear the Tuna

In a hot pan, heat olive oil over medium-high heat. Sear the tuna for 1-2 minutes on each side for rare, or until desired doneness.

Prepare Honey Spiced Eggplant

4. Preheat Oven

Preheat oven to 400°F (200°C).

5. Season Eggplant

In a bowl, combine olive oil, honey, cinnamon, and salt. Toss the sliced eggplant in this mixture.

6. Roast Eggplant

Spread the eggplant on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and tender.

7. Cook Chutney

In a saucepan over medium heat, combine pineapple, red onion, ginger, brown sugar, apple cider vinegar, and salt. Cook until thickened, about 15 minutes.

8. Blend Coulis

In a blender, combine roasted red peppers, garlic, olive oil, balsamic vinegar, and salt. Blend until smooth.
