Preparation
Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the water and let it bloom for about 5 minutes.
Heat Coconut Mixture
In a saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.
Add Saffron
Add the saffron threads to the warm mixture and stir well. Let it steep for about 10 minutes for the flavors to infuse.
Combine Gelatin
Remove the saucepan from heat. Add the bloomed gelatin to the mixture and stir until fully dissolved.
Add Vanilla
Stir in the vanilla extract.
Pour into Molds
Pour the mixture into individual serving molds or cups. Allow to cool to room temperature.
Chill
Cover the molds with plastic wrap and refrigerate for at least 4 hours, or until set.
Serve
To serve, run a knife around the edges of the panna cotta and invert onto a plate. Garnish with fresh fruit or coconut flakes if desired.
