Preparation

    Prepare Lentil & Quinoa

    In a saucepan, combine lentils, quinoa, diced carrot, celery, onion, minced garlic, and vegetable broth. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for about 25 minutes or until lentils and quinoa are cooked. Drain excess liquid if necessary.

    Make Cauliflower & Parsnip Puree

    In a pot, boil chopped cauliflower and parsnips until tender. Drain and transfer to a blender. Add butter, heavy cream, salt, and pepper. Blend until smooth and creamy.

    Prepare Chive Oil

    In a blender, combine chopped chives, olive oil, and salt. Blend until smooth. Strain if desired for a clear oil.

Cooking

    Sear the Salmon

    Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper. Place fillets in the skillet skin-side down. Sear for about 4-5 minutes, then flip and cook for an additional 3-4 minutes until cooked through and golden brown.

    Roast the Asparagus

    Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 10-12 minutes until tender.
