Preparing the Cannoli Shells

Make the Dough
In a mixing bowl, combine flour, sugar, salt, and melted butter. Add the egg and white wine, mixing until a dough forms. Knead until smooth.

Roll and Cut
Roll out the dough on a floured surface until thin. Cut into circles, about 4 inches in diameter.

Fry the Shells
Wrap the dough circles around cannoli tubes and secure with a little water. Heat oil in a deep pan and fry the shells until golden brown. Remove and drain on paper towels.
Making the Pistachio Cream Filling

Blend the Filling
In a bowl, mix mascarpone cheese, pistachio paste, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip heavy cream to soft peaks and gently fold into the pistachio mixture.
Preparing the Chocolate Crumble Topping

Make the Chocolate Crumble
Melt butter and dark chocolate together. In another bowl, mix flour, brown sugar, and salt. Combine with melted chocolate mixture until crumbly. Spread on a baking sheet and bake at 350°F (175°C) for 10 minutes or until crisp.
Assembling the Cannoli

Fill the Cannoli
Using a piping bag, fill the cooled cannoli shells with the pistachio cream.

Top with Chocolate Crumble
Sprinkle the chocolate crumble topping generously over the filled cannoli before serving.
