Method
Cooking the Pasta
- 1
Boil the Pasta
Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
Making the Sauce
- 2
Sauté the Leeks and Garlic
In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté until softened, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
- 3
Add Tomatoes and Seasonings
Add the canned crushed tomatoes, lemon zest, lemon juice, red chili flakes, salt, and black pepper. Stir well and let it simmer for 10 minutes.
- 4
Cook the Seafood
Add the shrimp, calamari, and mussels to the skillet. Cover and cook for an additional 5-7 minutes, or until the mussels have opened and the shrimp are cooked through.
Combining
- 5
Combine Pasta and Sauce
Add the drained linguini to the sauce, tossing to combine. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
- 6
Garnish and Serve
Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
