Preparation
Prepare Gelatin
In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom.
Heat Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot, but not boiling.
Add Gelatin
Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved. Add lime zest, lime juice, and basil leaves, mixing gently.
Strain Mixture
Strain the mixture through a fine-mesh sieve into a measuring cup to remove the basil leaves and any lumps.
Pour into Molds
Pour the strained mixture into individual serving cups or molds. Refrigerate for at least 4 hours or until set.
Serve
Once set, serve chilled. Optionally, garnish with additional lime zest or basil leaves before serving.
