Method

Stuffed Chicken Preparation

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted. Remove from heat and let cool slightly. Mix in goat cheese, salt, and pepper.

    Stuff the Chicken

    Preheat the oven to 180°C (350°F). Cut a pocket in each chicken breast and fill with the spinach and goat cheese mixture. Secure with toothpicks if needed.

    Sear and Bake the Chicken

    In an oven-safe skillet, heat olive oil over medium-high heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden. Transfer the skillet to the preheated oven and bake for 20-25 minutes.

Cauliflower Puree Preparation

    Cook the Vegetables

    Boil cauliflower, carrots, and parsnips in salted water until tender, about 15 minutes. Drain and let cool slightly.

    Blend into Puree

    In a blender, combine the cooked vegetables with butter, salt, and pepper. Blend until smooth and creamy.

Fried Chickpeas Preparation

    Prepare Chickpeas

    Rinse and drain chickpeas. Pat dry with a paper towel. In a skillet, heat olive oil over medium heat. Add chickpeas and fry until crispy, about 10-12 minutes. Season with paprika and salt.

Honey Mustard Chicken Jus Preparation

    Make the Jus

    In a saucepan, combine chicken stock, honey, and Dijon mustard. Simmer for 10-15 minutes until slightly thickened. Season with salt and pepper.
