Chicken Stuffing

Puree

Fried Chickpeas

Gooseberry Chicken Jus

Method

Prepare the Chicken

  1. 1

    Stuff the Chicken

Preheat the oven to 180°C (350°F). In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and mix in goat cheese, salt, and pepper. Cut a pocket in each chicken breast and fill with the spinach and goat cheese mixture. Secure with toothpicks if necessary.

  2. 2

    Bake the Chicken

Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and juices run clear. Remove from oven and let rest.

Prepare the Puree

  1. 3

    Cook the Vegetables

In a pot, boil carrots, cauliflower, and parsnips until tender. Drain and return to the pot.

  2. 4

    Blend the Puree

Add butter, heavy cream, salt, and pepper to the pot and blend using an immersion blender until smooth.

Fry the Chickpeas

  1. 5

    Prepare Chickpeas

Heat olive oil in a pan over medium heat. Add drained chickpeas, salt, and cumin. Fry until golden and crispy, about 10-15 minutes.

Make the Jus

  1. 6

    Cook the Jus

In a saucepan, combine chicken stock and gooseberries. Simmer for 10 minutes until gooseberries are soft. Blend until smooth and stir in butter, salt, and pepper.

Plate the Dish

  1. 7

    Serve

On a plate, spread a generous amount of the vegetable puree, place the stuffed chicken on top, garnish with the fried chickpeas, and drizzle the gooseberry chicken jus over the dish.
