Prepare the Chicken

Stuff the Chicken
Preheat the oven to 180°C (350°F). In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and mix in goat cheese, salt, and pepper. Cut a pocket in each chicken breast and fill with the spinach and goat cheese mixture. Secure with toothpicks if necessary.

Bake the Chicken
Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and juices run clear. Remove from oven and let rest.

Blend the Puree
Add butter, heavy cream, salt, and pepper to the pot and blend using an immersion blender until smooth.

Plate the Dish

Serve
On a plate, spread a generous amount of the vegetable puree, place the stuffed chicken on top, garnish with the fried chickpeas, and drizzle the gooseberry chicken jus over the dish.
