Preparation

    Prepare the Ahi Tuna Tartar

    Dice the Ahi tuna and avocado into small cubes. Chop the green onion finely. In a bowl, mix the tuna, avocado, green onion, soy sauce, sesame oil, and lemon juice. Gently fold together and set aside.

    Make the Saffron Leek Fonduta

    Slice the leeks and sauté them in a pan with a bit of olive oil until soft. Add the heavy cream, saffron, salt, and pepper. Bring to a simmer and stir in the parmesan cheese until melted. Keep warm.

    Prepare the Lemon Aioli

    In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt to taste. Set aside.

    Make Sweet Potato Chips

    Thinly slice the sweet potatoes and toss them in olive oil and salt. Bake at 400°F (200°C) for about 20 minutes or until crispy.

    Prepare the Sesame Vinaigrette

    Whisk together rice vinegar, soy sauce, sesame oil, honey, and sesame seeds in a small bowl. Set aside.

Assembly

    Plate the Dish

    On a plate, place a generous scoop of the Ahi tuna tartar. Drizzle with sesame vinaigrette. Serve with saffron leek fonduta on the side, a dollop of lemon aioli, and sweet potato chips for crunch.
