    Prepare the Split Yellow Peas

    Rinse the split yellow peas under cold water in a fine mesh strainer until the water runs clear. This removes any dust or impurities.

    Cook the Onions

    In a medium-sized pot, heat the olive oil over medium heat. Add the finely chopped red onion and sauté until translucent and slightly golden, about 5-7 minutes.

    Add Ginger and Turmeric

    Stir in the grated fresh ginger and turmeric powder. Cook for an additional 1-2 minutes until fragrant, stirring occasionally to prevent burning.

    Combine Ingredients

    Add the rinsed split yellow peas to the pot, followed by the water and salt. Stir well to combine all the ingredients.

    Simmer the Mixture

    Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30-40 minutes, or until the peas are tender and have absorbed most of the liquid.
