    Prepare the Ingredients

    Chop the cabbage into thin strips, dice the onions, and tomatoes, mince the garlic, and peel and cube the bergere potatoes. Slice the chili peppers, removing seeds if desired for less heat.

    Cook the Potatoes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed bergere potatoes and sauté for about 10-12 minutes, or until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

    Sauté the Aromatics

    In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the diced onions and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, sliced chili peppers, cardamom, salt, and black pepper. Cook for an additional 5 minutes, allowing the tomatoes to soften and the spices to blend.

    Cook the Cabbage

    Add the chopped cabbage to the skillet. Stir well to combine all ingredients. Cover the skillet and cook on low heat for about 10-15 minutes, stirring occasionally until the cabbage is tender.

    Combine with Potatoes

    Once the cabbage is cooked through, add the sautéed bergere potatoes back into the skillet. Mix everything gently to combine, and cook for another 5 minutes to heat through.

    Serve

    Taste and adjust seasoning if necessary. Serve hot as a side dish or a main vegetarian meal.
