Harvesting the Grapes
Select ripe Pinot Grigio grapes from the vineyard in Friuli-Venezia Giulia. Ensure that the grapes are free from rot or damage.

Crushing and Pressing
Crush the grapes in a clean fermentation vessel to release the juice. Press the crushed grapes to extract as much juice as possible.

Adding Water and Yeast
Combine the extracted grape juice with 1000 ml of filtered water in the fermentation vessel. Sprinkle 5 grams of yeast over the juice mixture and stir gently.

Fermentation Process
Allow the mixture to ferment at a controlled temperature (around 18-20°C) for 2-3 weeks. Monitor the fermentation process daily.

Adding Sugar and Sulfites
After fermentation, dissolve 30 grams of sugar in a small amount of water and add it to the mixture. Then, carefully add 20 grams of sulfites to stabilize the wine.

Racking the Wine
Transfer the wine to a clean container, leaving sediment behind. This process is known as racking and helps to clarify the wine.

Bottling
After the wine has been clarified, bottle it in clean, sterilized bottles. Seal each bottle securely with a cork.

Aging
Store the bottled wine in a cool, dark place for at least 3-6 months to allow the flavors to develop.
